A few things to consider when building a platter;
Portion size: as a rule of thumb, plan on serving 30-60g (1-2oz) of each cheese per person.
Serving tips: temper cheeses by taking them out of the refrigerator up to 45 minutes in advance, leaving rinds on to keep them from drying out.
Clean-up: if you have left-over cheese, wrap it in parchment of wax paper and store it in the most humid part of the fridge (usually the vegetable drawer); this will allow the cheese to breathe.
Pairings: add some colour and complimentary flavours to your platter by incorporating some of the following items:

- Something salty, like olives and tapenades
- Something toasted, like artisanal breads and crackers
